Learn how to make Pakatlya Purya, a traditional Maharashtrian sweet recipe from our chef Archana on Ruchkar Mejwani. This recipe is prepared with soft puri / poori dipped in sugar syrup and garnished with chopped almonds & pistachios. <br /> <br />Ingredients: <br /> <br />For Puri: <br />1 Cup All Purpose Flour <br />1/4th cup Semolina <br />A Pinch of Salt <br />2 tbsp Hot Ghee <br />100 gms Curd <br />Ghee for deep frying <br /> <br />For Sugar Syrup: <br />1 Cup Sugar <br />1/2 Cup Water <br />Almonds, chopped <br />Pistachios, chopped <br /> <br />Method: <br /> <br />- In a large bowl add all purpose flour, semolina, hot ghee and salt. Mix everything well. <br />- Then add curd as required and make a soft dough. Keep this dough aside for 5 minutes. <br />- To make the sugar syrup in a pan add sugar and water. Let the sugar melt completely. Once the syrup reaches one thread consistency switch off the flame. <br />- Add chopped almonds and pistachios. <br />- Heat ghee for deep frying. <br />- Take small portions of the dough and make round balls. <br />- Start rolling into small puri. Similarly keep all the puris ready for frying. <br />- Deep fry in medium hot ghee on both the sides. <br />- Dip the puris in the sugar syrup and garnish with chopped almonds and pistachios. <br />- Pakatlya Purya is ready to be served!
